Gord-tadas

Hubby-pie has today off work (not skivving; he took a day of vacation to deal with some appointments!) Gordon graciously offered to make us lunch, and voilà! Black-bean tostadas:

Gordon has 13 days left in the office before his finishes with the goverment! Then he has June off as paid vacation, during which he'll be setting up his law practice. I am looking forward to seeing more of him, especially if it means more Gord-tadas...

  1. Oh, gorgeous lunch! Any special recipe or just something he makes up as he goes along?

  2. Michele, he made it up as per my instructions. Smear on some (canned) refried black beans. Top with grated cheese, tomato and scallion. Bake at about 375 for 15 minutes or so. Sprinkle on cilantro, top with avocado and serve with salsa! I got the tostadas at the Mexican grocery store in Ottawa.
